Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup butter
- 1 egg
- 1 teaspoon baking powder
- lemon zest (grated from one lemon)
- 1/2 cup powdered sugar
- colored sprinkles
Preparation of Christmas Cookies in Air Fryer
In a large bowl, mix the flour, 1/2 cup sugar, the grated zest of one lemon, and the baking powder.
Add the softened butter cut into pieces and knead until you have a crumbly mixture.
Add the egg and knead firmly until you have a firm and homogeneous dough.
Form a dough ball, wrap it in plastic wrap, and let it rest in the refrigerator for an hour.At the end of the resting time, on a floured work surface, with the help of a floured rolling pin, roll out the dough to 1/4 inch (about 0.5 cm) thickness, and cut out your cookies with Christmas-shaped cutters.
Re-knead the scraps and create more cookies in the same way until the dough is used up.
Place them in the basket of the air fryer, keeping them slightly spaced, and cook them at 320°F (160°C) for eight minutes (with the prepared dough and depending on the size of your air fryer, you may need to cook all the cookies in multiple batches).
Once cooked, remove them from the air fryer and let them cool completely.Put the sifted powdered sugar in a small bowl, make a well in the center, and add a tablespoon of hot water.
Mix with a teaspoon until you have a thick and smooth mixture, adding a little bit of water at a time if necessary.
Put a teaspoon of the prepared icing on each cookie, spreading it with the back of the same teaspoon, and immediately decorate with the colored sprinkles so that they stick to the cookies while the icing dries.
When the icing is completely dry, you can enjoy your Christmas cookies in the air fryer or store them in a tin or airtight container.
