Coconut and mint truffles are irresistible no-bake treats, easy and quick to prepare.

Ingredients
- 8.8 oz mascarpone
- 1/2 cup shredded coconut (+ extra for decorating the truffles)
- 2 tbsps mint syrup
- 1/4 cup powdered sugar
Preparation of coconut and mint truffles
In a large bowl, pour the mascarpone and shredded coconut and mix them with a spatula.
Incorporate the mint syrup and powdered sugar and work the mixture until it becomes thick, adding a little more coconut if necessary.Place some shredded coconut on a flat plate.
With damp hands, form small balls of the mixture and roll them in the plate to coat them with coconut on all sides.
Place them on a tray without overlapping and let them rest in the refrigerator for at least an hour before serving your coconut and mint truffles.
