Cold Pea Soup

Ingredients

  • 1.1 lbs peas (fresh or frozen)
  • 1 shallot
  • 2 ladles vegetable broth
  • 1/2 cup milk
  • 2 tablespoons extra virgin olive oil
  • salt

Preparation of the Cold Pea Soup

  • Cook the peas in plenty of salted boiling water, drain them, and rinse under cold running water.
    Chop the shallot and sauté it in a pan with a little oil.

  • Transfer the peas and shallot to a mixer with the vegetable broth and milk, and blend everything until you get a smooth cream. If the cold pea soup is too thick, you can thin it with more broth or milk.

  • Salt and let the soup rest in the refrigerator for at least an hour before serving.
