Ingredients
- 1.1 lbs peas (fresh or frozen)
- 1 shallot
- 2 ladles vegetable broth
- 1/2 cup milk
- 2 tablespoons extra virgin olive oil
- salt
Preparation of the Cold Pea Soup
Cook the peas in plenty of salted boiling water, drain them, and rinse under cold running water.
Chop the shallot and sauté it in a pan with a little oil.Transfer the peas and shallot to a mixer with the vegetable broth and milk, and blend everything until you get a smooth cream. If the cold pea soup is too thick, you can thin it with more broth or milk.
Salt and let the soup rest in the refrigerator for at least an hour before serving.
