Creamy Pumpkin Orzo

Creamy pumpkin orzo is an irresistible comfort food first course that is easy and quick to prepare.

Ingredients

  • 14 oz pumpkin
  • 11 oz orzo
  • Half onion
  • 6 oz smoked provola cheese
  • 2 cups vegetable broth
  • extra virgin olive oil
  • salt

Preparation of Creamy Pumpkin Orzo

  • Cut the pumpkin, peeled and seedless, into small cubes.
    Chop the onion.
    Grate the provola cheese.

  • In a large pot, heat a drizzle of extra virgin olive oil and sauté the onion.
    Add the pumpkin and stir to flavor.
    Cover with a little vegetable broth and cook until the pumpkin has softened.

  • Blend with an immersion blender, then add the orzo and adjust the salt.
    Cook the pasta by adding more vegetable broth as needed and stirring, as if it were a risotto.
    When the orzo is cooked, turn off the heat and add the grated provola cheese, stirring thoroughly.
    Serve immediately, piping hot, your creamy pumpkin orzo.
