Ingredients

  • 3 egg yolks
  • 50 g sugar
  • 25 g corn flour (or cornstarch)
  • 1 cup soy milk
  • vanilla extract (a few drops)

Preparation of Dairy-Free Custard

  • Pour the soy milk into a saucepan, add the vanilla extract, and place on the heat.
    Meanwhile, beat the egg yolks with the sugar until you get a smooth mixture.

  • Add the corn flour, stirring again to make everything smooth and without lumps.
    When the soy milk reaches a boil, without removing the saucepan from the heat, add the egg mixture while stirring with a whisk for a minute: the cream will thicken immediately.

  • Turn off the heat, transfer the dairy-free custard to a large plate, leveling it and covering it with plastic wrap in contact with the surface of the cream itself.
    Let it cool completely and use it for your recipes.
