Deviled New Potatoes

Ingredients

  • 1.1 lbs new potatoes
  • rosemary
  • sage
  • 1 clove garlic
  • chili pepper (chopped)
  • extra virgin olive oil
  • salt

Preparation of deviled new potatoes

  • Wash the potatoes thoroughly under running water, gently scrubbing them to remove any soil residues.

  • Cut them in half without peeling.
    In a large pan, heat a few tablespoons of extra virgin olive oil with the clove of garlic in its skin, a bit of chopped rosemary, and a bit of chopped sage.

  • Add the halved potatoes, salt, and cook them for about fifteen minutes with a lid on, over medium heat, stirring often.
    Adjust the salt, sprinkle with chopped chili pepper, and serve your deviled new potatoes immediately, piping hot.
