Dried strawberries or strawberry chips are a method of preserving strawberries that gives us a delicious snack to enjoy as is, or to enhance yogurt, smoothies, or muesli, or as decoration, natural coloring, or flavoring for desserts (in the last two cases, simply pulverize them in a mixer and use the resulting powder).

Strawberries are the false fruit symbol of spring (the true fruit are the small yellow seeds on the surface) with a delicious and irresistible taste, while drying is one of the oldest preservation methods, which involves removing moisture from food, dehydrating it and enhancing its flavor.

There are different methods to dry strawberries, from direct exposure to the sun for several days (laying them on a wooden board and covering them with a veil or a thin net to keep insects away) during the hot summer hours, to using a convenient dehydrator, an appliance suited for this purpose, to slow and low-temperature cooking in an oven, preferably with a fan.   • 14 oz strawberries

Preparing Dried Strawberries in the Oven

  • Preheat the oven to fan mode at 140°F.
    Wash the strawberries well under running water and dry them with a clean cloth.

  • Slice them not too thin and place them on a baking sheet lined with parchment paper with the cut side down.
    Raise the oven temperature to 175°F and let cook for three hours.

  • Remove from the oven and let cool for about twenty minutes, then check: if the strawberries still have a gummy texture, put them back in the oven for a little longer until they resemble chips.
    When your dried strawberries are completely cool, you can put them in sterilized glass jars and store them away from heat and moisture sources for up to six months if perfectly dried.
