Just like the yogurt cake without eggs, this donut has a soft and slightly crumbly texture, but it’s delicious and irresistible even without eggs. It’s a bit low because of this, but it’s perfect to accompany milk, tea, coffee, or digestive liquors.

Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cups potato starch
- 3/4 cups sugar
- 1 1/4 cups milk
- 1/2 cups vegetable oil
- 1 teaspoon vanilla extract
- 1 packet baking powder
- powdered sugar (for decoration)
Preparation of the eggless donut
In a large bowl, put the flour, potato starch, sugar, and baking powder and mix them thoroughly.
In another bowl, pour the milk, vegetable oil, and vanilla extract and mix everything with a whisk to make the mixture homogeneous.Make a well in the center of the bowl with the flour and pour the liquid mixture in a trickle, constantly stirring with the whisk to avoid forming lumps, until you get a smooth batter.
Grease and flour a donut pan with a diameter of 9 inches and pour in the prepared batter.Bake in a preheated static oven at 350°F for thirty minutes: do the toothpick test to check if it’s done, otherwise, extend the baking time a bit.
Remove from the oven, let it cool completely in the pan, and then transfer your eggless donut to a serving platter.
Sprinkle with powdered sugar as desired and serve.
