Fake Zucchini Sushi

Fake zucchini sushi is a tasty and intriguing finger food, very easy to prepare.

Perfect as an appetizer or to accompany an aperitif, for a summer aperitivo, it is easy and quick to make. These are rolls of grilled zucchini filled with a cheese mousse and enriched with finely chopped mortadella (or cooked ham if you prefer).

Ingredients

  • 2 zucchini
  • 7.05 oz cream cheese
  • 2.12 oz parmesan (grated)
  • 1.76 oz mortadella (in one piece)
  • extra virgin olive oil

Preparation of Fake Zucchini Sushi

  • Wash the zucchini, trim them and slice them thinly along the longest side.
    Grill them on a very hot grill or griddle on all sides and let them cool.
    In a small bowl, put the cream cheese and the grated cheese and work them into a cream until you get a homogeneous mixture.

  • Place the grilled zucchini slices on a cutting board and spread them with some of the cheese mixture.
    Roll them up to create rolls, place them in an airtight container on one of the rolled sides, close them and let them rest in the refrigerator for at least an hour.

  • After the resting time or just before serving, chop the mortadella without turning it into a paste.
    Place the zucchini rolls on a serving plate and top with a little chopped mortadella, a drizzle of extra virgin olive oil, and some oregano, and serve your fake zucchini sushi.
