Ingredients
- 14 oz fava beans (shelled)
- 9 oz pecorino
- 1 clove garlic
- mint
- extra virgin olive oil
- salt
Preparation of Fava Bean and Pecorino Salad
Cut the pecorino into shavings.
Shell the fava beans and also remove the skin covering the fava bean seeds.
Blanch the seeds for four minutes in salted boiling water, drain them, and run them under cold running water to stop the cooking.Peel them and collect them in a bowl.
Add the pecorino shavings and season with the minced garlic clove, extra virgin olive oil, and a bit of chopped mint.Gently mix and adjust the salt to taste.
Serve your fava bean and pecorino salad.
Notes
You can cook the fava bean seeds the day before, peel them and store them in an airtight container in the fridge without seasoning them.
