Fennel alla marinara

Ingredients

  • 2 fennel bulbs
  • 10 cherry tomatoes
  • 5 fillets anchovy fillets
  • black olives (pitted)
  • 1 tbsp capers
  • 1 tbsp tomato paste
  • 1 clove garlic
  • oregano
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Marinara Fennel

  • Wash the fennel bulbs and cut them into wedges about 1/4 inch thick.
    Wash the cherry tomatoes and cut them in half.
    Peel the garlic.

  • In a large skillet heat a drizzle of extra virgin olive oil and lightly brown the garlic, then remove it. Add the anchovy fillets and let them dissolve in the oil, stirring.
    Add the capers and a handful of pitted black olives, the cherry tomatoes and the tomato paste, and mix.

  • Add the fennel and about 1 fl oz (2 tbsp) of water, stir and cover with a lid.
    Cook over medium heat for 15 minutes, stirring occasionally and adding halfway through some oregano, some chopped parsley and adjusting the salt to taste.
    Turn off the heat and serve your fennel alla marinara hot.
