Fennel purée is a tasty side dish, easy to make and very appetizing.
Soft and irresistible, an excellent alternative to classic purées, but with a fresh, slightly sweet and aromatic flavor, perfect to accompany meat, fish, cheese, or eggs. It’s made with a few simple ingredients and is very delicious.

Ingredients
- 8 fennels
- 3 tbsps cooking cream
- 2 oz butter
- Parmesan cheese (grated)
- lemon juice
- salt
- pepper
Preparation of Fennel Purée
Clean the fennels, removing the damaged or too hard outer leaves, and wash them.
Cut them into wedges and place them in a bowl.
Cover them with cold water and the juice of half a lemon.Bring a pot of water to a boil.
Add the well-drained fennels and a pinch of coarse salt and cook the fennels until they become soft and the cooking liquid has evaporated.Pass them through a vegetable mill, collecting the purée in a bowl.
Transfer the purée to a saucepan, add the butter and stir over low heat until the fennel purée is well thickened.
Add the cooking cream, stir to incorporate it into the mixture, and turn off the heat.
Add fifty grams of grated Parmesan cheese, stir again and serve, adjusting salt and adding some pepper if desired.
