Fennel Schiacciata

The fennel schiacciata is a tasty, rustic appetizer or side dish, easy to make and irresistible.

This is a recipe with simple ingredients but great flavor, of peasant origin, where people learned to enhance what the garden offered, transforming a few elements into something surprisingly good. The fennel bulbs, sweet and delicate, become the true stars: thinly sliced, they meld with the batter creating a soft interior and a slightly crunchy surface. It is a preparation that wins you over for its lightness and authentic taste, perfect to enjoy hot just out of the oven but also great at room temperature. Ideal as an appetizer, for a rustic aperitif or to accompany cured meats and cheeses.

Ingredients

  • 3 fennel bulbs
  • 1 cup water
  • 1 cup all-purpose flour
  • 1.41 oz Grana Padano (grated)
  • rosemary
  • cornmeal (a few tablespoons)
  • extra virgin olive oil
  • salt

Preparation of the fennel schiacciata

  • Wash the fennel bulbs, remove the stalk, discard the outer damaged leaves and, using a mandoline, slice them very thinly.
    In a bowl pour 1 cup of water, a generous pinch of salt and gradually add the flour, whisking to avoid lumps.

  • Also add the grated Grana Padano, 3 tablespoons of extra virgin olive oil and a little rosemary, continuing to whisk until you obtain a smooth, lump-free batter.
    Toss the fennel slices with the prepared batter and line a baking pan with a sheet of parchment paper brushed with a little oil.

  • Pour the fennel and batter into the pan, level them and then sprinkle the surface with a little cornmeal.
    Bake in a preheated conventional oven at 374°F for 35 minutes.
    Remove from the oven, let cool slightly and serve your fennel schiacciata.
