Ingredients
- 4 eggs
- 0.6 cups sugar
- 2.25 cups almond flour (or finely chopped blanched almonds)
- 1 packet baking powder
- lemon zest (grated)
- powdered sugar (for decoration)
Preparation of the Flourless Almond Bundt Cake
In a large bowl, combine the eggs, sugar, and lemon zest. Beat with an electric mixer for a few minutes until light and fluffy.
Add the sifted baking powder, incorporating it with a spatula in upward movements, then gradually add the almond flour (or finely chopped blanched almonds), and incorporate it as well with the spatula in upward movements.Grease and flour a 9.5-inch diameter bundt pan (or if you cannot use flour, use a silicone mold that doesn’t require greasing and flouring, or line the pan with parchment paper) and pour the prepared mixture into it.
Bake in a preheated static oven at 350°F for half an hour.
Remove from the oven, let it cool completely, then transfer the flourless almond bundt cake to a serving platter or tray.
Finish with powdered sugar as desired and serve.
