Fondant potatoes, or pommes fondant, are a delightful side dish from classic French cuisine, easy to make and irresistible.
Crispy on the outside and creamy inside, delightful and full of flavor, they are a perfect alternative to classic roasted potatoes, but they are simply cooked in a pan. They are vegetarian and perfect to accompany main dishes of all kinds, whether meat, fish, cheese, or eggs, with a few simple ingredients and a particular cooking method that makes them absolutely irresistible.

Ingredients
- 5 potatoes (medium)
- 2 cups vegetable broth
- 1 clove garlic
- sage
- extra virgin olive oil
- salt
Preparation of Fondant Potatoes
Peel the potatoes and cut them into cylinders approximately 1.5 inches in diameter and 2 inches in height.
Peel the garlic.Heat a few tablespoons of extra virgin olive oil in a high-sided pan.
Brown the clove of garlic and a bit of sage.
Remove the garlic and add the potatoes.Brown them on both sides, add the vegetable broth, lower the heat, and cover with a lid.
Cook for fifteen minutes, then remove the lid and continue cooking until the cooking base is dry.
Add salt and serve your fondant potatoes hot.
