German potato salad, known as Kartoffelsalat, is a traditional German dish that is simple and tasty, easy to make.
Without mayonnaise, but with a rich and flavorful dressing, this potato salad is perfect to enjoy in all seasons because it is irresistible when warm, at room temperature, or cold, versatile and perfect to accompany any type of dish.

Ingredients
- 1.75 lbs potatoes
- 1 cup vegetable broth
- 1 onion (yellow)
- 4 tbsp white wine vinegar
- 1 tbsp mustard
- parsley
- 2 tbsp sunflower oil
- 1 tsp salt
- pepper
Preparation of German Potato Salad
Wash the potatoes with their skins and place them in a pot.
Cover them with cold water, bring to a boil and let them cook for about twenty minutes from when it starts boiling: they should become soft but still firm.
While the potatoes are cooking, chop the onion.Drain the potatoes and let them cool slightly, then peel them and cut into slices about 1/4 inch thick, placing them in a bowl.
Put the chopped onion with the vegetable broth in a small pot and bring to the stove.
When it is just about to boil, lower the heat and let it cook for a couple of minutes, then add the white wine vinegar, mustard, salt, and a pinch of pepper and mix well.Pour the prepared mixture over the sliced potatoes and gently mix so that the seasoning is absorbed by the potatoes.
Let it rest for fifteen minutes, then add the sunflower oil and some chopped parsley.
Mix gently and adjust the salt.
The German potato salad is ready to be enjoyed either warm or cold, according to your taste and the season.
