Grated Apple Cake

Ingredients

  • 3 eggs
  • 3.5 oz sugar
  • 2.7 tbsp vegetable oil
  • 1 tsp vanilla extract (or the grated zest of one lemon)
  • 1.2 cups all-purpose flour
  • 1 pinch ground cinnamon
  • 1 packet baking powder
  • 2 apples
  • powdered sugar (for decoration)

Preparation of the Grated Apple Cake

  • In a large bowl, with electric beaters, beat the eggs with the sugar until you obtain a light and fluffy mixture.
    Add the vegetable oil and the teaspoon of vanilla extract, continuing to mix with the electric beaters.
    Combine the flour, baking powder, and a pinch of cinnamon, mixing until you have a homogeneous mixture.

  • Peel the apples and grate them with a large-hole grater excluding the core.
    Add them to the mixture, incorporating them with a spatula.
    Grease and flour a 9-inch diameter cake pan and pour in the prepared mixture.

  • Bake your grated apple cake in a preheated static oven at 350°F for thirty minutes, do the toothpick test which, when inserted into the cake, should come out dry, otherwise prolong the baking for a bit more.
    Once baked, remove the cake from the oven and let it cool in the pan before transferring it to a platter or serving dish and decorate as desired with powdered sugar before serving.
