Ingredients for Greek Tomato Fritters

  • 1.1 lbs red tomatoes (ripe)
  • Half red onion
  • 3/4 cups flour (all-purpose or cake flour)
  • mint
  • oregano
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Greek Tomato Fritters

  • Wash the tomatoes and dry them.
    Cut them in half, remove the seeds and peel them.
    Cut the resulting pulp into cubes and collect it in a bowl.

  • Clean the onion, chop it and add it to the tomato pulp.
    Clean a sprig of mint with a damp paper towel, tear the leaves and add them to the bowl along with a teaspoon of dried oregano.
    Mix with a spoon, adding the flour a little at a time, until you get a batter.
    Adjust salt and pepper to taste.

  • Heat plenty of oil in a deep frying pan and fry the prepared batter by spoonfuls, a few at a time, for a few minutes, turning them on all sides.

  • Lift your Greek tomato fritters with a slotted spoon and let them drain the excess oil on a plate lined with parchment or paper towels.
    Serve them immediately, piping hot.
