Grilled Zucchini Salad

Ingredients

  • 4 zucchini
  • 4 eggs
  • 11.3 oz canned tuna in oil
  • 7 oz feta cheese
  • mint
  • extra virgin olive oil
  • salt

Preparation of Grilled Zucchini Salad

  • Place the eggs in a small pot, cover them with cold water and bring to a boil.
    Cook them for eight minutes from the boiling point.
    Meanwhile, wash the zucchini, trim them, and cut them into slices.
    After the eggs are cooked, remove them with a slotted spoon and place them in a bowl of cold water and ice to stop cooking and cool them down.

  • Grill the zucchini on all sides on a grill pan.
    Peel the eggs and slice them.
    Season the zucchini with extra virgin olive oil, salt, and chopped mint leaves, mixing thoroughly.
    Arrange them on a serving plate.
    Top them with egg slices.

  • Drain the tuna from its oil, shred it, and place it on the eggs.
    Crumble the feta and sprinkle it over your grilled zucchini salad.
    Finish with a drizzle of extra virgin olive oil, adjust the salt if necessary, and serve.
