Herb Omelette

Ingredients

  • 8 eggs
  • 4.23 oz pecorino cheese
  • 0.42 cups milk
  • mint
  • parsley
  • chives
  • extra virgin olive oil
  • salt

Preparation of the Herb Omelette

  • Coarsely chop a bunch of mint, a bunch of parsley, and some chives.
    In a large bowl, lightly beat the eggs with a fork.
    Add the cheese, milk, chopped herbs, salt, and pepper, and mix thoroughly.

  • Heat a drizzle of extra virgin olive oil in a large pan.
    Pour in the prepared mixture and cook for about ten minutes, turning your herb omelette halfway through cooking.
    It is excellent both hot and cold.

  • You can also opt for baking in the oven, by pouring the mixture into a baking pan lined with parchment paper, at 356°F in static mode for about half an hour.
    It keeps well closed in an airtight container in the refrigerator for up to one day.
