How to cook fresh spinach
To begin, carefully wash the spinach to remove any trace of soil. Keep only the leaves and the more tender stems.
Place them in a colander and rinse them thoroughly under running water.Transfer them still wet into a pan, cover with a lid and cook over medium heat for about 10 minutes, stirring occasionally with a wooden spoon.
Once cooked, you can use them in your recipes or season them with a drizzle of oil and a pinch of salt and serve them as a side dish.
Let them cool completely before storing them in an airtight container. In the refrigerator they keep for up to 3 days.
