Ingredients
- 2 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/3 cup vegetable oil
- 1 egg
- 2 tsp baking powder (half a packet)
- 1 packet vanilla powder (vanillin)
- 1 1/2 cups jam (of your choice)
Preparation of the jam crumble cake
In a large bowl put the flour, sugar, vanilla powder and baking powder and mix them together.
Make a well in the center of the dry ingredients and pour in the vegetable oil and the egg, then start mixing until you obtain a crumbly, homogeneous mixture (not a compact dough).Line a 9 1/2-inch (24 cm) diameter pan with parchment paper.
Put two-thirds of the mixture into the pan, pressing it down on the bottom and up the sides to make it even.
Pour the jam into the prepared shell and level it with the back of a spoon.Let the remaining crumbly dough fall over the jam, trying to cover it completely.
Bake in a preheated conventional oven at 356°F (180°C) for about 30 minutes, until golden.
Remove from the oven and let your jam crumble cake cool completely before transferring it to a serving plate or platter and serving.
