Ingredients
- 5 eggs (medium)
- 1/2 cup sugar
- 2 + 1/2 tbsps butter
- 1 vanilla bean (seeds)
- 3/4 cup all-purpose flour
- jam (or preferred preserve)
- powdered sugar (for decoration)
Preparation of the Jam Roll
Melt the butter in a saucepan over low heat or in the microwave and let it cool.
Separate the yolks from the whites and beat the whites until stiff peaks form. Beat the yolks with the sugar and the seeds of a vanilla bean until you get a light and fluffy mixture.Add the sifted flour to the yolks, incorporating it with a spatula and gentle movements from bottom to top, then incorporate the egg whites in the same way until you have a uniform and fluffy mixture.
Finally, fold in the cooled melted butter.
Line a large baking tray with parchment paper and pour the prepared mixture, leveling it.Bake in a preheated static oven at 390°F for eight to nine minutes until lightly golden.
Place a damp cloth on a work surface and place the prepared cake with all the parchment paper containing it (so that the cloth is in contact with the paper) then roll everything gently and let it cool slightly.Unroll, fill the rectangle of dough with the chosen jam, leveling it, and roll up the dough itself, gently removing the parchment paper at the same time, until you get a roll.
Wrap it with some plastic wrap and let it rest in the refrigerator for at least an hour.
Before serving, place your jam roll on a platter and decorate with powdered sugar to taste.
