Jova’s eggs, or “ova alla Jova,” are a main dish based on eggs, a variant of cloud eggs, easy to make and very tasty.
A viral recipe shared by singer Jovanotti during his arena tour in 2025, created by the chef who follows his tour, Maria Vittoria Griffoni in 2018. The recipe is very simple, with only eggs, salt, and pepper, and it is perfect as an energetic, protein-rich, and healthy meal, accompanied by seasonal vegetables or salad.

Ingredients
- 3 eggs
- salt
- pepper
Preparation of Jova’s Eggs
Separate the yolks from the whites, placing the whites in a large bowl and the yolks in a small bowl.
Using an electric mixer, beat the whites until they form very stiff peaks: when you turn the bowl upside down, they should not move or drip.
Line a baking sheet with parchment paper.With a fork, beat the yolks in the small bowl with salt and pepper and brush them, creating two circles, on the parchment paper.
Place the beaten egg whites on the yolk circles, giving them the appearance of little clouds.
Gently brush the remaining yolks on the little egg white clouds.Bake in a preheated static oven at 356°F for seven to eight minutes, until golden brown.
Remove from the oven and serve your Jova’s eggs.
