Killer spaghetti is a delicious and flavorful first course originating from Bari.
It is a recipe invented at the end of the 1960s by restaurateur Enzo Francavilla, referred to as “killer” by some customers for this spicy and irresistible dish, hence the name of the iconic dish. The spaghetti is cooked directly in a cast-iron skillet, in a little tomato sauce, sticking and charring, “risotto-ing” with a kind of broth made with tomato paste, thus acquiring different textures and a hot and irresistible flavor. It’s not the easiest recipe, but with the right care, you can achieve a very tasty dish with few, simple ingredients.

Ingredients
- 14 oz spaghetti
- 14 oz tomato sauce
- 1 quart water
- 2 tbsps tomato paste
- 3 cloves garlic
- 3 chili peppers
- extra virgin olive oil
- coarse salt
Preparation of Killer Spaghetti
In a small pot, combine water, tomato paste, and 100 g of tomato sauce and stir.
Place the pot on the stove and when it reaches a boil, add a tablespoon of coarse salt and let it simmer over low heat.
Meanwhile, crush two garlic cloves, leaving them in their skins, and chop the third clove and the chili peppers.In a large cast-iron skillet big enough to hold the spaghetti in full length without breaking, add plenty of extra virgin olive oil, the garlic cloves in their skins, and the minced garlic and chili peppers, and place on the stove over low heat.
When the garlic turns golden, add the remaining tomato sauce and cook over high heat until the sauce boils even in the center of the skillet.Add the spaghetti (always without breaking it), distribute it gently using a spatula and let it “stick” a bit to the bottom of the skillet before turning it over with tongs, always without breaking it, to char it on the other side as well.
When they have taken on a brownish color, add a few ladles of the prepared water and tomato mixture, covering the spaghetti.Continue to cook over high heat, gently moving the spaghetti, which will gradually start to soften.
Add more ladles of the water with the paste as needed, until the spaghetti is cooked (this will take about fifteen minutes in total).
Serve your killer spaghetti immediately, piping hot.
