Lactose-Free Chocolate Chip Cookies

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 oz chocolate chips
  • Half package baking powder
  • 1 package vanillin

Preparation of Lactose-Free Chocolate Chip Cookies

  • Using an electric mixer, beat the egg with the sugar.
    Gradually add the vegetable oil while continuing to beat.
    Once incorporated, add the baking powder, vanillin, and flour gradually, until you have a smooth mixture.

  • Finally, fold in the dark chocolate chips using a spatula.
    Cover the dough with plastic wrap and let it rest in the refrigerator for at least an hour.
    After resting, on a lightly floured surface, quickly work the dough and roll it out to about a quarter-inch thickness with a rolling pin.

  • Using a cookie cutter, cut out as many cookies as possible, re-kneading the scraps, and place them on a baking sheet lined with parchment paper, keeping them slightly apart.

  • Bake in a preheated oven at 356°F in static mode for about ten minutes: they should remain quite light.
    Remove from the oven and let cool completely on a wire rack.
    Store your lactose-free chocolate chip cookies in an airtight container or a tin box.
