Lactose-free cookies are delicious and very easy to make.
Without lactose, with a few simple pantry-staple ingredients, they are perfect for those who are lactose intolerant, to dunk in tea or coffee.

Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 cup sugar
- 3 1/2 tbsp vegetable oil
- 1 egg
- Half packet baking powder
- 1 packet vanillin (or the grated zest of half a lemon)
Preparation of Lactose-Free Cookies
Whisk the egg with the sugar in a bowl, gradually adding the vegetable oil.
Combine the sifted flour, baking powder, and vanillin, mixing with a fork until the liquids are absorbed, then quickly knead with lightly floured hands to form a dough, wrap it in some plastic wrap and let it rest in the refrigerator for at least an hour.After the resting time, roll out the dough on a lightly floured surface to a thickness of 1/4 inch.
Use a cookie cutter to cut out the cookies and place them on a baking sheet lined with parchment paper, slightly spaced apart.Bake your lactose-free cookies in a preheated static oven at 356°F for ten minutes.
Take them out of the oven and let them cool completely on a wire rack.
Store them in an airtight or tin container.
