Unlike classic amaretti, these sweets have a strong lemon aroma and are perfect to accompany a good cup of tea or winter herbal tea, but also a refreshing summer drink, making them perfect all year round!

Ingredients
- 8.8 oz almonds
- 3 egg whites (from medium eggs)
- 3 lemons (untreated)
- 1 vial bitter almond essence
- 5.3 oz sugar
- powdered sugar (for finishing)
Preparation of Lemon Amaretti
Finely grind the almonds with the 150 g of sugar in a mixer: you can use either peeled or unpeeled almonds (or a mix, always respecting the quantity required for the recipe).
Wash the lemons, dry them well, and grate the zest.In a large bowl, combine the almond and sugar mixture, lemon zest, the three egg whites, almond essence, and mix with a spatula until you have a homogeneous mixture, then knead by hand.
Take a walnut-sized amount of dough at a time, rolling it between the palms of your hands to form a ball and place all the balls on a baking sheet lined with parchment paper, keeping them spaced apart.Sprinkle them generously with powdered sugar and bake in a preheated oven, in static mode at 320°F, for forty minutes.
Remove from the oven, let cool slightly and serve your lemon amaretti.
