Lemon Cake in Air Fryer

The lemon cake in air fryer is a soft pantry cake, easy and quick to prepare.

Ingredients

  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 2/3 cups all-purpose flour
  • 1 packet baking powder (half packet)
  • lemon juice (from half a lemon)
  • lemon zest (grated zest from one organic lemon)
  • powdered sugar (for decoration)

Preparation of the Lemon Cake in Air Fryer

  • In a large bowl, beat the eggs with the sugar until the mixture is light and fluffy.
    Add the juice of half a lemon and the grated zest of one lemon, continuing to mix with a whisk, then the vegetable oil in a thin stream and the milk, until you get a homogeneous mixture.

  • Also incorporate the flour and baking powder.
    Grease and flour a cake pan with an 18-20 cm diameter suitable for your air fryer and pour the prepared mixture into it.
    Preheat the air fryer to 320°F.

  • Bake the lemon cake in the air fryer for twenty-five minutes, performing the toothpick test at the end of the cooking time: inserting a toothpick in the center of the cake should come out dry, otherwise cook for a few more minutes.
    Let it cool completely in the pan, then transfer the cake onto a serving plate or tray and decorate as desired with powdered sugar before serving.
