Macario potatoes are a tasty potato-based side dish that is rich and delicious, easy to make.
A recipe of uncertain origin, this is a clean-out-the-fridge type dish, with simple ingredients almost always found in the pantry, without eggs, easy to make and perfect for accompanying meat or cheese dishes.

Ingredients
- 2.2 lbs potatoes
- 1 onion
- 3.5 oz cooked ham (diced)
- Parmesan cheese (grated)
- parsley
- extra virgin olive oil
- butter
- salt
Preparation of Macario Potatoes
Peel the potatoes and cut them into chunks.
Place them in a pot, cover with cold water and put on the stove.
Let them cook for about ten minutes from boiling, until they are tender.Drain them, place in a bowl, and mash them with a fork (or with a potato masher) coarsely.
Clean the onion and chop it.
Also clean a bunch of parsley with damp kitchen paper and chop it too.In a large pan, heat a drizzle of extra virgin olive oil and let the onion brown over low heat until it softens, then turn off the heat and sprinkle with chopped parsley.
Add them to the potatoes along with the diced cooked ham and mix.Butter a baking dish and pour in the prepared mixture, leveling it just enough to cover the entire dish.
Sprinkle with grated cheese and top with a few knobs of butter.
Bake in a preheated static oven at 446°F for about ten minutes, until lightly golden, and serve your Macario potatoes.
