Ingredients
- 3 eggs
- 3/4 cup sugar
- 1 cup mascarpone
- 7 oz dark chocolate
- 1 cup all-purpose flour
- 1 packet baking powder
- 1 tsp vanilla extract
- powdered sugar (for decoration)
Preparation of the Mascarpone and Chocolate Bundt Cake
Chop the dark chocolate and melt it in a double boiler or in the microwave.
In a large bowl, beat the eggs with the sugar using an electric mixer until the mixture is light and fluffy.
Add the mascarpone, vanilla extract, and melted chocolate, continue mixing with the beaters.Add the flour and baking powder.
Butter and flour a bundt cake pan 9.5 inches in diameter and pour in the prepared mixture.Bake in a preheated static oven at 356°F for about forty minutes: do the toothpick test to check for doneness, inserting it into the cake not before half an hour from the start of baking, and removing it dry when cooking is complete.
Remove from the oven, let it cool completely, and serve your mascarpone and chocolate bundt cake, dusting with powdered sugar if desired.
