Mashed Potatoes with Gorgonzola and Speck

Mashed potatoes with gorgonzola and speck are a tasty appetizer or side dish, easy to make and very delicious.

Enjoy them freshly made, hot and crispy, perfect for accompanying an aperitif or as a starter for a dinner with friends, or as a side dish for meat main courses.

Ingredients

  • 4 potatoes
  • 4 slices speck
  • 3.5 oz gorgonzola
  • salt

Preparation of Mashed Potatoes with Gorgonzola and Speck

  • Wash the potatoes well with the skin on to remove any soil residue.
    Place them in a pot, cover them with water, and bring them to the stove.
    Cook them until they are soft and easy to pierce with a fork.
    Drain well.

  • Line a baking tray with parchment paper, place the potatoes keeping them spaced apart, and cut the skin with a sharp knife making a cross.
    With the bottom of a glass, gently smash them.
    Season with a bit of salt.

  • Using a couple of teaspoons, distribute the gorgonzola on the potatoes (it will start to melt with the heat of the potatoes).
    Cut the speck into strips and distribute them over the gorgonzola.
    Bake in a preheated ventilated oven at 392°F for about twenty minutes, until golden (alternatively, you can cook them in an air fryer at the same temperature for half the time indicated for the oven).
    Remove from the oven and serve immediately, hot, your mashed potatoes with gorgonzola and speck.
