Ingredients
- 1 Egg (fresh)
- 1 cup cup Vegetable Oil (or mild extra virgin olive oil)
- 1 tbsp Lemon Juice (or White Wine Vinegar)
- 1 pinch Salt
Preparation of Mayonnaise in 1 Minute
Keep the egg and oil in the refrigerator for at least half an hour before using them.
Choose an oil with a mild taste so that its flavor does not overly characterize the mayonnaise.Gently crack the egg into a small bowl and let it slide into the hand blender’s cup without breaking.
Add the oil, lemon juice (or white wine vinegar), and a pinch of salt.Insert the hand blender into the cup until it touches the bottom, then turn it on: in a few seconds the egg will whip up into your mayonnaise.
Move the hand blender in the cup to finish blending all the ingredients for a few seconds, then use your mayonnaise in 1 minute immediately or transfer it to a sterilized glass jar and store it in the refrigerator to use within four or five days.
