Mediterranean Chicken Bites

Mediterranean chicken bites are a tasty second course of white meat, easy to make and very delicious.

Simple ingredients make them very fragrant and full of flavor, perfect for any occasion, from lunch or dinner with family, to a dinner with friends, easy and quick to prepare.

Ingredients

  • 1.1 lbs chicken breast
  • 1 cup cherry tomatoes
  • 2 tbsp capers
  • 1.8 oz olives
  • Half glass white wine
  • Half glass water
  • 1 red onion (small)
  • flour
  • oregano
  • extra virgin olive oil
  • salt

Preparation of Mediterranean Chicken Bites

  • Cut the chicken breast into chunks, removing any small bones and cartilage.
    Coat the pieces in flour on all sides, removing any excess.
    Clean the onion and slice it thinly.

  • In a large pan, heat a drizzle of extra virgin olive oil and sauté the onion with the capers.
    Add the chicken pieces and brown on all sides for about ten minutes, stirring occasionally.
    Wash the cherry tomatoes and cut them in half.

  • When the chicken is golden on all sides, add the white wine and let it evaporate.
    Add the halved cherry tomatoes, olives, salt, and sprinkle with a bit of oregano.
    Stir, add the water, and let it cook for another five minutes.
    Turn off the heat and serve your Mediterranean chicken bites immediately, hot, adding a bit more oregano to taste.
