Mediterranean Chicken Thighs in Air Fryer

Mediterranean chicken thighs in the air fryer are a tasty main course, easy to make and very delicious.

Chicken, potatoes, cherry tomatoes, olives, and herbs, a simple process and so much flavor for a dish perfect for any occasion, from Sunday lunch, to family lunch or dinner, to dinner with friends.

Ingredients

  • 4 chicken drumsticks
  • 7 oz potatoes
  • 10 cherry tomatoes
  • 10 black olives
  • Half red onion
  • oregano
  • extra virgin olive oil
  • salt

Preparation of Mediterranean Chicken Thighs in Air Fryer

  • Peel the potatoes, cut them into chunks, and place them in a bowl. Add the chicken drumsticks and season everything with extra virgin olive oil and salt, mixing thoroughly.
    Place the drumsticks and potatoes in a tray suitable for the air fryer.

  • Cook in a preheated air fryer for twenty minutes, turning halfway through.
    Meanwhile, wash the cherry tomatoes, cut them in half, and place them in a bowl.
    Add the olives and the sliced onion, and season with oregano, extra virgin olive oil, and salt.

  • After the twenty minutes of cooking the chicken, add the mixture of cherry tomatoes, onion, and olives, mix and cook for another ten minutes at 392°F.
    Serve immediately, piping hot, your Mediterranean chicken thighs in the air fryer.
