Ingredients
- 4 cod fillets
- 150 g peeled cherry tomatoes
- 3 tablespoons pitted black olives
- 1 tablespoon capers
- 1 clove garlic
- parsley
- extra virgin olive oil
- salt
Preparation of Mediterranean Cod Fillets
Peel the garlic.
Heat a few tablespoons of extra virgin olive oil in a large pan and let the garlic brown.
Add the capers and olives, let them flavor for a minute, and add the peeled cherry tomatoes.Stir, salt, and cover with a lid.
Let it cook over medium-low heat for ten minutes.
Add the cod fillets.With a spoon, cover them with the cooking base, so you don’t have to turn them over, cover the pan again, and let it cook for another ten minutes.
Serve your Mediterranean cod fillets sprinkled with a bit of chopped parsley if desired.
