Ingredients
- 2 eggs
- 3.4 oz milk
- 3.4 oz vegetable oil
- 2 tbsps grana cheese (grated)
- 7 oz pizza mozzarella
- 5 oz cherry tomatoes
- 3 tbsps tomato sauce
- 3 tbsps black olives (pitted)
- 8.5 oz all-purpose flour
- 1 packet instant yeast for savory dishes
- oregano
- basil
- extra virgin olive oil
- salt
Preparation of the Mediterranean Plumcake
Wash the cherry tomatoes, set aside four and cut the rest in half.
Slice the olives into rings.
Cut the mozzarella into cubes or grate it.
In a large bowl, beat together the eggs, grated cheese, vegetable oil, milk, and a pinch of salt.
Add the flour and the instant yeast for savory dishes, always mixing with the beaters.
Add the chopped cherry tomatoes, sliced olives (saving a few for decoration), tomato sauce, and mozzarella, and mix thoroughly with a spatula.
Also add some chopped basil and oregano.
Butter and flour, or line with parchment paper, a 4.3 x 8.2 inch loaf pan and pour in the prepared mixture, leveling it.
Cut the reserved cherry tomatoes in half and immerse them in the mixture with the cut part facing up.
Add the reserved olive rings as well.
Lightly salt the cherry tomatoes, sprinkle with some oregano, and finish with a drizzle of extra virgin olive oil.
Bake in a preheated static oven at 356°F for about fifty minutes, checking with a toothpick no earlier than the first thirty minutes of baking.
Remove from the oven and let your Mediterranean plumcake cool before slicing and enjoying it.
