Ingredients
- 3 egg whites (at room temperature)
- 5.3 oz sugar
- 1 tsp potato starch
- 1 tsp corn starch
- 1 pinch cream of tartar
- 1 tsp white wine vinegar
- 3.5 oz Nutella (+ extra for decoration)
- 1.7 cups heavy cream
Preparation of Mini Nutella Pavlovas
Beat the egg whites to stiff peaks with one tablespoon of sugar taken from the total required for the recipe.
Continue beating while adding the remaining sugar gradually.
Then add the sifted potato starch, corn starch, and cream of tartar in the same way.
Add the white wine vinegar last, and continue beating until you get a shiny and firm meringue.
Transfer it to a piping bag with a star nozzle.Line a baking sheet with parchment paper and form meringue disks 3 inches in diameter, then pipe another circle of meringue on each edge, creating baskets.
Bake them in a preheated oven at 250°F in static mode for fifty-five minutes.Remove from the oven, let them cool slightly, and gently detach them from the paper, then cool completely on a wire rack.
Whip the heavy cream to stiff peaks, add the 3.5 oz of Nutella, and continue whipping until your mixture is homogeneous.
Fill the meringue baskets with the obtained mixture, decorate with more Nutella as desired, and serve your mini Nutella pavlovas.
