Mini Tarte Tatin with Cherry Tomatoes are delightful puff pastry appetizers, easy to make and very tasty.
Inspired by the Tarte Tatin, a French dessert made with apples and puff pastry, they are puff pastry shells filled with caramelized cherry tomatoes, cooked “upside down”, meaning with the filling placed first, under the puff pastry, where it cooks, and then flipped and served with a few cubes of melted mozzarella on the hot tomatoes and fresh basil. Perfect to accompany an aperitif, to enrich a buffet or brunch table, or as a starter.

Ingredients
- 1 roll puff pastry (rectangular)
- 25 cherry tomatoes
- 3.5 oz mozzarella
- 1 egg yolk
- basil
- brown sugar
- oregano
- extra virgin olive oil
- salt
Preparation of Mini Tarte Tatin with Cherry Tomatoes
Wash the cherry tomatoes and cut them in half.
Cover a baking sheet with a sheet of parchment paper.
Pour a teaspoon of extra virgin olive oil in one spot on the paper and spread it with the back of the teaspoon to create a circle about 4 inches in diameter.Create six more circles in the same way.
Sprinkle each oil circle with a bit of brown sugar, a sprinkle of oregano, and a pinch of salt, then cover everything with the cherry tomatoes arranged like a flower, with the cut side facing the paper.
Unroll the puff pastry and cut out 4-inch diameter disks using a cookie cutter or pastry cutter.
Place the puff pastry disks on top of the cherry tomatoes, covering them completely and pressing the edges firmly.Prick the surface of the puff pastry with the tines of a fork, then brush it with the egg yolk beaten with a little water.
Bake in a preheated oven at 375°F in static mode for about twenty minutes, until golden.
Meanwhile, drain the mozzarella from its preserving liquid and cut it into cubes.
When the mini tarte tatin with cherry tomatoes are cooked, remove them from the oven and gently flip them onto a plate.
Place a few cubes of mozzarella in the center (it will melt slightly with the heat) and garnish with a few fresh basil leaves.
