Ingredients

  • 2 3/4 cups maccheroni ((about 11.3 oz))
  • 3.5 oz pancetta (one single slice)
  • 1 clove garlic
  • 1 onion
  • 1 chili pepper (optional)
  • basil (a few leaves)
  • parsley (chopped)
  • pecorino (grated pecorino cheese)
  • extra virgin olive oil
  • salt

Preparation of Molisana-style Maccheroni

  • Put a pot of water on the stove for cooking the pasta.
    Meanwhile, prepare the sauce.
    Cut the pancetta into small cubes.

  • Peel and chop the onion.
    Peel and chop the garlic as well.
    In a large skillet heat two tablespoons of extra virgin olive oil and let the chopped garlic and onion brown.

  • Add the pancetta, a handful of chopped parsley, a few basil leaves and the broken-up chili pepper and let cook for a few minutes.
    Cook the pasta al dente in boiling salted water, drain it, keeping some of the cooking water, and add it to the sauce in the skillet.

  • Add plenty of grated pecorino cheese and mix thoroughly, adding a little of the reserved cooking water if necessary.
    Serve your Molisana-style maccheroni immediately.
