Ingredients
- 2.2 lbs mussels
- 12 oz potatoes
- 9 oz mixed pasta
- Half onion
- 1 clove garlic
- 6 cherry tomatoes
- extra virgin olive oil
- salt
Preparation of Neapolitan Pasta with Potatoes and Mussels
Clean the mussels: remove the byssus and scrape the shells with a brush, then rinse them well under cold running water.
Heat a drizzle of extra virgin olive oil in a large pot, add the peeled garlic clove and then the mussels, cover with a lid.
Cook over high heat until the mussels have opened, then remove them with a slotted spoon, take them out of their shells and set them aside.
Also strain the cooking liquid and set it aside.Peel the potatoes and cut them into cubes.
Wash the cherry tomatoes and cut them in half.
Chop the onion.
In a large pot, lightly brown the onion in a drizzle of extra virgin olive oil.
Add the potatoes and cherry tomatoes and stir to coat; cook over low heat for 7–8 minutes, then cover with the strained mussel cooking liquid and add more water if needed.Bring to a boil, mash the potatoes, season with salt and then add the mixed pasta.
Cook for the time indicated on the pasta package, adding the mussels in the last minutes of cooking.
Divide among serving plates and serve your Neapolitan pasta with potatoes and mussels.
