Nine-Minute Cake

It’s called this way because its preparation time is just nine minutes, and it’s ready to bake, soft and delicate, perfect to enjoy plain or filled with jams, marmalades, and creams of your choice.

Ingredients

  • 2 eggs
  • 5.3 oz sugar
  • 1.8 oz butter
  • 2 cups all-purpose flour
  • 3/4 cup milk
  • 1 packet baking powder
  • 1 packet vanillin

Preparation of the Nine-Minute Cake

  • Melt the butter in a saucepan over low heat or in the microwave, and let it cool.
    Using an electric mixer, beat the eggs with the sugar until you have a light mixture, then gradually add the milk and melted butter.
    Add the sifted flour, baking powder, and vanillin, still using the mixer, but work the mixture briefly, just until incorporated.

  • Butter and flour a 8-inch diameter cake pan and pour in the prepared mixture.
    Bake in a preheated static oven at 338°F for about thirty-five minutes, checking with a toothpick only after the first half hour of baking, which should come out dry.

  • Remove from oven and let cool completely before removing the cake from the pan and transferring it to a plate or serving tray.
    If desired, sprinkle your nine-minute cake with powdered sugar before serving.
