No-bake Lemon Meringue Cake

The no-bake lemon meringue cake is an irresistible homemade ice cream cake, quick and easy to make.

Based on clever ice cream, the ice cream made with just two simple ingredients, and enriched with meringues and fresh lemon, it is a perfect cake as an after-meal treat or for an occasion. It is prepared in a few minutes without cooking and should rest in the freezer for at least six hours to reach the right consistency: you can prepare it the night before for the next day or in the morning to serve it after dinner.

Ingredients

  • 10 oz whipping cream
  • 3.5 oz condensed milk (click for the super easy recipe to make it at home)
  • 2 lemons (untreated)
  • 7 oz meringues

Preparing the No-bake Lemon Meringue Cake

  • Wash one lemon, dry it, grate the zest, and squeeze its juice.
    In a large bowl, pour the cold liquid cream and whip it to stiff peaks with electric beaters.
    Add the condensed milk, pouring it in a stream, and without stopping the beaters, work the mixture until it is fluffy and homogeneous, then add 2 oz of the lemon juice prepared earlier and filtered.

  • Also add the grated lemon zest and the meringues crumbled with your hands, mixing with a spatula and gentle movements from bottom to top.
    Line a 8-inch diameter springform pan with cling film, using enough to extend beyond the edges.

  • Pour the prepared mixture in and level it, then cover everything with cling film and let it rest in the freezer for at least six hours.
    After the resting time, you can transfer your no-bake lemon meringue cake onto a serving plate, decorating it as desired with lemon slices, and serve it. If there are leftovers, keep it in the freezer.
