Ingredients
- 12 oz cocoa cookies
- 4 tbsp unsweetened cocoa powder
- 4 tbsp powdered sugar
- 2/3 cup milk
- 9 oz mascarpone
- 9 oz Nutella
- 3/4 cup heavy whipping cream
Preparation of the No-bake Nutella and Mascarpone Roll
Finely grind the cookies in a mixer.
Collect them in a bowl and add the cocoa and powdered sugar.
Mix thoroughly and add the milk gradually, while continuing to stir, until you obtain a smooth mixture.Place two sheets of plastic wrap on a work surface, slightly overlapping them lengthwise.
Pour the prepared mixture onto the surface of the wrap and use a spatula to spread and compact it to form a rectangle about 8 by 12 inches.In a large bowl, place the mascarpone, Nutella, and well-chilled whipping cream from the fridge and beat everything with an electric mixer until you have a thick and firm cream.
Spread the cream over the cookie mixture, and level it.Using the sheet of plastic wrap underneath, gently roll the mixture over the cream to form your no-bake Nutella and mascarpone roll.
Wrap the roll in the plastic wrap and let it rest in the fridge for a couple of hours before serving it sliced.
