Norcia-style Pasta

Norcia-style pasta is a traditional first course from Umbria that is quick and easy to prepare.

The main ingredient of this dish is Umbrian sausage, which is characterized by the presence of garlic and pepper in its mixture, but you can substitute it with any sausage you like, plus a few other simple ingredients such as ricotta and Pecorino. The preparation is quite easy and quick, resulting in a very flavorful dish that you can make even more refined, if you wish, with a dusting of truffle.

Ingredients

  • 11 oz pasta
  • 11 oz Italian sausage
  • 3/4 cup ricotta
  • Half onion
  • Half glass white wine
  • Pecorino cheese (grated)
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Norcia-style Pasta

  • Chop the onion.
    Remove the casing from the sausage and crumble it.
    In a large skillet, brown the sausage with a little oil, stirring for a few minutes, then add the onion, stir and let it cook.

  • Meanwhile, bring a pot full of water to a boil for the pasta.
    Deglaze the sausage with the white wine, let it evaporate, then add the ricotta and stir to melt it into the sauce.

  • Cook the pasta al dente in the salted boiling water, drain it and add it to the prepared sauce.
    Add plenty of grated Pecorino cheese and pepper to taste, a drizzle of extra virgin olive oil and mix thoroughly.
    Serve immediately, piping hot, your Norcia-style pasta.
