Onion Flatbread

The onion flatbread is a tasty appetizer, a kind of savory cake without yeast and eggs, easy and quick to prepare.

Simple ingredients and a very easy preparation method for a rustic appetizer perfect for accompanying an aperitif, for an informal dinner with friends, or to enrich a party buffet.

Ingredients

  • 4 onions (mixed)
  • 1 3/4 cups flour
  • 1/3 cup Parmesan (grated)
  • 1/4 cup extra virgin olive oil (+ more for seasoning)
  • 1/8 cup corn flour
  • 1 1/2 cups water
  • salt

Preparation of the Onion Flatbread

  • Clean the onions and slice them.
    In a bowl, pour the water, the 1/4 cup of extra virgin olive oil, and a teaspoon of salt, and mix with a whisk.
    Gradually add the flour, little by little, always mixing with the whisk to avoid lumps, until you obtain a smooth and liquid mixture.

  • Line a rectangular baking sheet with a sheet of parchment paper and pour the prepared mixture into it.
    Distribute the onions over the mixture.
    Sprinkle with grated Parmesan and corn flour.

  • Finish with a drizzle of extra virgin olive oil on top and bake in a preheated fan oven at 392°F for thirty minutes.
    Remove from the oven and serve your onion flatbread.
