Pan-fried Mini Pizzas

Pan-fried mini pizzas are a delicious appetizer, easy and quick to make with no rising times.

Perfect for accompanying a drink, for a dinner aperitif, or even to enrich a party buffet, they cook directly in the pan without turning on the oven! Thanks to the use of instant yeast for savory preparations, there is no need to wait for the normal rising times, so just a quick and easy dough, a simple topping, pan cooking, and they’re ready to be enjoyed!

Ingredients

  • 1 1/4 cups all-purpose flour
  • 3/8 cup water
  • 1 teaspoon instant yeast for savory preparations
  • 3 1/2 oz peeled tomatoes
  • 1 3/4 oz pizza mozzarella (shredded)
  • basil
  • extra virgin olive oil
  • salt

How to Make Pan-fried Mini Pizzas

  • In a large bowl, mix the flour with the instant yeast for savory preparations.
    Create a well in the center and pour in a teaspoon of extra virgin olive oil and the water gradually, mixing with a fork until the powders have absorbed all the liquids.

  • Add half a teaspoon of salt and knead by hand until you have a smooth, homogeneous, and non-sticky dough (if needed, you can add a bit more flour).
    Blend the peeled tomatoes in a blender with a pinch of salt and a drizzle of extra virgin olive oil.
    Roll out the prepared dough on a work surface with the help of a rolling pin to a thickness of about 3/8 inch and with a pastry cutter or a 2-inch cookie cutter, cut out your mini pizzas, re-kneading and cutting the remaining pieces until the dough is used up.

  • Place the mini pizzas in a pan, top them with a teaspoon of sauce, and some torn basil.
    Place the pan on the stove, cover it with a lid, and let cook for five minutes over low heat.
    Remove the lid, top the mini pizzas with the shredded mozzarella, cover again, and let cook over low heat for a couple of minutes until the mozzarella is melted.
    Turn off the heat and serve your mini pizzas immediately.
