Ingredients for Pandoro Cookies
- 1 3/4 cups all-purpose flour
- 2/3 cup powdered sugar
- 1 tbsp vanilla powdered sugar
- 5 1/2 tbsp butter
- 1 egg
- 1 vanilla bean (seeds only)
- 1 packet vanillin
- 1 packet baking powder
- powdered sugar
Preparation of Pandoro Cookies
In a large bowl, pour the flour, regular powdered sugar, vanilla powdered sugar, seeds from a vanilla bean, baking powder, and vanillin packet, and mix them thoroughly.
Add the softened butter in pieces and knead until you get a crumbly mixture.
Add the egg and knead firmly until you have a smooth dough.
Form a dough ball, wrap it in plastic wrap, and let it rest in the refrigerator for thirty minutes.After the resting time, take the dough and roll it out on a lightly floured surface to a thickness of 1/4 inch.
Use a round cookie cutter with a diameter of 2 3/4 inches to cut out disks (1).
With a smooth-bladed knife, cut the two side wedges from each disk (2, 3).
Re-knead the scraps and cut out more cookies in the same way.
Place them on a baking tray lined with parchment paper, keeping them slightly apart (4).
Bake them in a preheated fan oven at 340°F for about ten minutes, until lightly golden (5).
Remove them from the oven, let them cool completely, and dust them with powdered sugar to taste.
They can be stored in a tin box for up to a week.
