The Paradise Cake is a classic of Italian pastry.

It was invented in the 19th century by a pastry chef from Pavia, Enrico Vigoni, and soon became the symbol of this city. It owes its name to the fact that the noblewomen of Pavia called it heavenly.

Simple and quality ingredients for a soft and light cake, perfect to enjoy plain sprinkled with powdered sugar, or to fill with creams, jams, or marmalades according to your taste.

Ingredients

  • 6 eggs
  • 1 cup sugar
  • 7 oz butter
  • 1 cup all-purpose flour
  • 2/3 cup potato starch
  • 1 pod vanilla (the seeds)
  • lemon zest (grated from one lemon)
  • 1 packet baking powder
  • powdered sugar (for decoration)

Preparation of the Paradise Cake

  • Using an electric mixer, beat the softened butter at room temperature cut into pieces with the sugar until you obtain a thick and homogeneous cream.
    Add one egg yolk at a time, keeping the egg whites in a bowl, and always mixing with the mixer until incorporated before adding the next yolk (always keeping the egg white with the previous one).

  • When you have incorporated all the yolks, add flour, potato starch, and baking powder, sifted, a little at a time, mixing gently with a spatula.
    Add the seeds from one vanilla pod and the grated zest of a lemon.
    Beat the egg whites set aside to stiff peaks and add them to the mixture, always mixing with the spatula with gentle movements from bottom to top.

  • Butter and flour a 10-inch springform pan and pour the prepared mixture into it, leveling it.
    Bake in a preheated static oven at 350°F for forty minutes.
    Do the toothpick test by inserting a toothpick in the center of the cake; it should come out dry, otherwise extend the cooking time a little longer.
    Remove from the oven, let cool completely, and then transfer your cake to a serving plate and finish it as you like with a sprinkle of powdered sugar.
