Paradise Plumcake

The paradise plumcake is a soft and fragrant cake, easy to make and irresistible.

Very fluffy and simple to prepare, it is perfect for breakfast or a snack, but also as a dessert, either plain or filled with creams and jams according to your taste.

Ingredients

  • 3 eggs
  • 3/4 cup powdered sugar (+ extra to decorate the plumcake)
  • 9 tbsp butter
  • 7/8 cup all-purpose flour
  • 2/3 cup potato starch
  • lemon zest (grated zest of one lemon)
  • 1 packet vanillin
  • 1/3 cup milk (warm)
  • 1 packet baking powder for cakes

Preparation of the Paradise Plumcake

  • Whip the butter with 3/4 cup of powdered sugar, the grated zest of one lemon, and the vanillin until you obtain a soft and frothy mixture.
    Add one egg at a time, ensuring it is well incorporated into the mixture before adding the next one.

  • Gently fold in the sifted flour, potato starch, and baking powder using a spatula with delicate movements from bottom to top.
    Finally, incorporate the warm milk.
    Once you have a homogeneous mixture, pour it into a greased and floured 3.5 x 9 inches loaf pan.

  • Bake your paradise plumcake in a static oven preheated to 347°F for about thirty-five minutes: perform the toothpick test only after the first half hour of baking, so by inserting a toothpick in the center of the cake, it should come out dry; otherwise, extend the cooking time until it does.
    Let the plumcake cool completely in the pan before transferring it to a tray, sprinkle with powdered sugar to taste, and serve it.
